1x Samsung 850 Evo 500GB SSD or 2x Sandisk Plus (G-26) 240GB on RAID-0? pc building site custom pc builder

So, I was planning on buying my first SSD's ever and make a RAID-0 with them, but the thing is that, people recommended the Samsung 850 for me, but the thing is that where I live at, 1x Samsung 500GB costs $700, but 2x Samsung 250GB costs $1000... Which is a pretty big difference between those 2 versions if I wanted to make a RAID-0... So I'm not buying 2x Samsung 850's anymore, since the difference is that big, but I would buy 1x 500GB one. The thing is that, there is another SSD that I was researching about, and it's considerably slower, but 2x 240GB of this SSD costs only $600...

So, basically, I don't know what I should do here, because I don't want to spend that much on 2x Samsung 850's, but I would spend it on 1x. But if I only buy 1 Samsung SSD, I won't be able to make RAID-0... But if I buy the 2x Sandisk ones, I would be able to make RAID-0, but since each version is slower than the Samsung one, I don't know what I should do...

Summary - Which one would be better for me? (Speed wise, at the actual budget, those $100 don't really make much difference) Strictly performance wise, what would be better, 1x Samsung 850 500GB or 2x Sandisk 240GB on RAID-0?

PROCESSOR - I7 7700K MOTHERBOARD - ASUS Z270-A RAM - 2X16GB GRAPHICS CARD - GTX 1080 TI "Secondary" Storage - 1x2TB SEAGATE HDD
